Turns out that I have to install a new clutch assembly. Do I have to upgrade the PTO shaft to a modern 1 3/8 " diameter or are parts still available for my original 1 1/8" shaft? Also, how is the quality of the Central Tractor clutch disk and pressure plates as opposed to any other aftermarket parts available?
Any input would be greatly appreciated.

I use a lot of parts from c.t. and have good luck with them. I call the main one in Ill on their 1-888 no and get my parts delivered to my house. most of the time within 3 days. that no is 1-888-828-3276 Jw

Do yourself a favor.
Don't go to the CT Farm in Burlington and expect them to have the clutch (or much of anything else) you are looking for. Don't bother calling and asking either, because they will tell you yes on the phone, and no when you get there. Been there and done it.
They can get it, but they will tell you 10 days before it will be in, and then it won't be there for at least 2 weeks.
Find what you need and get it online. 3 days UPS and you will get better service and more knowledgable folks to deal with.
I only go to CT these days for simple stuff, like rearend fluid and such. They stock almost no parts now except common stuff like filters, belts and plugs.

Devines in Ferrisburg is a White Dealer and they have more parts for a Ford than CT. They can also order stuff in 3 days as opposed to 2 weeks too. They are some of the most helpful people I have met in the tractor business locally

What does a new clutch have to do with upgrading the pto to a larger size ? the two aren't connected. Nevertheless, you can get ORC's etc. for the smaller pto.
