The IH engines are not that bad. Got them have them and fixed them. Yes it is quite possible that the head could be cracked. Then on many 40-60 year old machines there are going to be problems. I have seen many an IH still running with cracked heads and have out lived Cats by a long shot. The gas over diesel head, if treated right will last for years. We have 3 machines that have been in constant use for close to 60 years and they are just fine. It is like everything else, it is how you treat it. If you follow the directions those motors will keep on chuging for years. They are a relatively low RPM diesel at that. 1150 RPM was pretty much a common for most IH engines of that type. As for Detroits, got them, have them and fixed them. No they do not need 2100 rpm to have any power. Detroits power can be adjusted in several ways. One is by bigger injectors, 70-120mm injectors, RPM was another way to boost power and the third was to tinker with the roots blower, on the 71 series you could go to the 4valve head design on the N series and get more power. The change on the timing from 1.99 to 2.xx on the roots blower is tricky and then adjust backward on the injector gear otherwise you would be really fouled up on the pump. You really want no more than 60 psi pressure to the injectors. There were some third party companies that made add-on compressor models so that the roots blower timing would not have to be changed. The latter was a bit more dicey since the engine is supposed to have a static air pressure of 7 lbs in the air box. You can boost it to about 13 lbs at max.
Higher RPMS, more power mean more wear and on the increased risk of breaking something. As for Detroits, they are noisy and will leak oil in more places that you have gaskets. Just the nature of the beast. They are probably one of the leakiest engines I have ever seen and tend to be very cold blooded. Need ether to start them even in warm weather. Not work the conversion hassles. The IH engine will be just fine.
