Update on cooking hydralic oil

Correction, Yes you can burn hydralic oil. Today I was cooking off the water in another batch of hydralic oil and I forgot it and left it about 3 hrs When I discoverd it, it was smoking and had that burnt smell. I had turned the heat up a little bit to speed the process, So the results are, no matter what I try to do, its possible to screw it up. Next time we pay more attention.

I work in the commercial food business. I work on kitchen equipment and see a lot of fryers. When oil gets up into that 425+ degree range you get smoke. A little high and POOOOF. Those oil fires start slow but man they speed up REALLL quick. With a fryer you can slide a sheet pan over it and smother it. Lucky you didn"t fry you building! Jeffcat

Actually I did have a piece of metal to slide over the top, just in case, BUT I caught it in time.
