I got a water temp gauge at the tractor junkyard today for $5. This is going to hold me over until I replace all the gauges with correct new ones.
How do I check to make sure it works before I install it?

Water boils ar 212 degrees (or less depending on your altitude) so boil some water, turn off the heat, insert the sensing bulb in the water without touching the container, and the gauge should read close to the boiling point on the gauge face. (If the gauge works!!)

Like said below, a pan of water works the best and be sure the bulb of the gauge doesn"t sit on the bottom of the pan. It will pick up heat faster that way and read wrong.

Doing it on the stove top is also easy and allows the bulb, and the candy thermometer to be watched at the same time. Even if it is not indicating 212 at the exact point the needle points to the red zone (we do not know what the face markings are) if it can be sen what the needle indicates when it is at 212, you can use it very well. What I do is get a microwave safe glass, fill it with water, put it in the microwave for about 2 minutes on HIGH. The water should be very hot. Put the end of the temp gauge in the water and see if the needle in the gauge moves, if it does, it works, if it won't move, it does not work.

While you're at it, why not stick a candy thermometer in the cup of water alongside the heat gauge bulb for a "reality check"?
