I know I have read here that people have been known to use RV antifreeze to fill their rear tires, what I am wanting to know is what is a good starting point for each tire (in gallons), any help is appreciated.

I don't know the number of gallons of fluid, and of course that depends somewhat on the size of your tires, but you can ask your local ag tire store and they will know for a given size tire. I do know it is best to fill over half full but not all the way full, like perhaps 3/4 full. Less than half sloshes too much, and all the way full doesn't leave enough give in the tire.
