i've got a 54 naa i't doesn't have a thermostat, it runs very cool for this time of year. shouldn't it have one to keep it about 160 to 180 deg

At least COVER the radiator with cardboard in winter.

You really need a thermostat,This does help the engine run more efficient. Your local FNH dealer can advise to which one you need.
