My '56 FMD with a '57 engine had a radiator shutter(which I removed) and a thermostat. Should it be one or the other?

You should have both, the shutters and the thermostat both help to get the operating temeperature up to normal when you start. I have a 1956 FMD, and I have both thermostat and shutters. If uve still got the old type thermostat, id replace it cos they can fail and actually break away from their housing, partially blocking the waterway (mine did this, was one of the reasons it boiled and blew the headgasket)

It is very important to proper engine performance and especially to engine life that engines operate hot enough to properly vaporize the fuel, warm the oil to normal consistency, and prevent the condensation of fuel, water, acids, and other crud carried into the crankcase with blowby gases. Generally a properly working thermostat will do the job, but if it is very cold and/or the engine is lightly loaded, it may be desireable to use a shutter or other radiator cover. If your engine warms up okay, you do not need the shutter.
