Could you please tell me what the oil pressure should
be and what the head torque pressure should be?
My tractor has a Z 129 motor.

Be sure the transmission and clutch work okay (check to see if it's a two-plate clutch...should have constant running PTO halfway down on pedal). If you don't know that much about the engine get somebody along who does and have them render an opinion, even if you have to pay them a few bucks for a competent ruling. Take a look at the radiator and be sure it's in decent shape.

Make sure the hydraulics goes up and down okay. It's normal for them to drift down after the engine is shut down.

See if the brakes work.

If it all checks out, and it doesn't have to be perfect, but all that stuff should work within reason, then the price seems okay. Especially so if it's Canadian. But a 35 in usable shape would probably bring about that most places in the US as well.

If the machine is sound it should do the kind of things you describe.
