I've recently purchased a 1978 MF135, made in france. It has an alternator with integral voltage regulator, but all wiring has been cut to the(Jaeger)gauges, presumably because it is now negative earthed. Do I have to replace the water temp and fuel gauges or can they be re-wired?

Ciao Gerald J. The water temp gauge is not the capillary tube type. It has 3 terminals for electrical connection, plus the gauge light.

Then if you can identify which is power and which is sensor it should be practical to rewire it without replacing parts if it hasn't been burnt up by incorrect experimental connections.

My MF-=35 has always been negtive ground.

Water temperature often is direct, not electrical and it has to be replaced because thats a capilary tube, not a wire that's been cut.

Gas gauge should work with new wired.
