Fill the gas tank; add Sta-Bil, per the label, run the engine to get the Sta-Bil in the carb. Check anti-freeze. Make sure you have clean, not milky, hydraulic fluid, ie, no water in it as it will freeze & crack your pump. Change if needed. Remove the plugs, mist the cylinders w/ oil. Replace plugs. Place the tractor on jack stands/blocks; get the wieght off the tires. Block the clutch. Lube all fittings. Take the battery out & take it home with you. If you can't store the tractor in a barn/shed, invest in a good tarp & bungee cords. Keep it covered! In the spring, check very carefully in the air filter & under the hood for mouse nests, etc before you start it. And lastly, the 8N owners manual has a chapter on this, so check that out in case I missed something.

I just turn the gas off at the bottom of the tank and let the engine run until it quits.

As long as you have Stabil in the gas I don't think having gas in the carb over winter will hurt anything, though.
