Ok, I know you guys up north are calling us whimps down here in Texas. But believe me,, we don't get cold and snow and the like very often. So, today when the sleet and rain and cold came into Fort Worth area the roads pretty much shut down and of course we just stayed in.

So, for Dawn!! and all you others that need something nice and warm to take the chill off.. Here you go.. my proven, award wining chile recipie.. Just follow it,, simple..

Meat, about 4 pounds of something, beef, pork, fresh killed venison, what ever. Cut that up into bout half thumb size.. NO ground meat!!

2 good sized onions, chopped up
1/2 tablespoon of Celery salt
Bunch of chopped up garlic,, fresh please,, bout 4
1 Tablespoon of parsley flakes
3 Tablespoons of Chili powder,,, I use Chimayo myself and get it from New Mexico. You wimps may want to start with 2 and add more after you taste it. Almost a table spoon of salt,, I cut back some because of the celery salt. 1/2 Tablespoon of black pepper.
1 teaspoon of Cumin (Comino)
1 teaspoon of Cilantro
2 cans of tomato sauce,, NOT paste!! 1 Tablespoon of red pepper

Ok, brown up your meat real good get it nice and brown. Scrape the bottom of the pot and throw in the onion and all the rest of the stuff, including the tomato sauce.. Add water as needed and set it to just a plop plop plop boil. Leave the lid off and add water as needed. Cook till you can’t stand it!! A pot of beans on the side by all means but NEVER in the chili!!! The sugar/starch in the beans will make the chili stick and change the taste for the worst. We eat in a bowl with chopped onion and cheese and the beans on the side with tortillas and the next day even better!!!

Serious about not putting the beans into the meat mix.. it will ruin it..

just may have to try that Ole country Boy's chilli receipe tonight .... starting to cool down here a bit in Southern California also ... durn near dropped below 80 degrees this afternoon and many reports that we may see low 70's high 60's this evening ... burrr ... time to put another presto log on the fire .... may even need to replace the Lycra with a warmer cotton tee shirt ... serious guys, we do feel for you during the winter time, but I'm glad I need not shovel anymore snow, sweeping sand off the driveway is just fine for now ..... . the added jalapenas do sound great

Oh, now you're making me homesick for the Arizona desert where I grew up. I still remember how shocked I was to visit Pennsylvania one summer and see that it was 69 (BELOW 70!!!) one morning in July. I couldn't understand why no one else was shocked! :-) and a happy sigh of memory.

Sounds like a good chili receipe and this old West Texas dehorn in the North Idaho Panhandle will try it tomorrow. I just got through BBQing three sirloins on the deck in 12 below zero standing on 9 inches of snow, in the dark and they came out the desired medium rare. It just tastes better when cooked over a real mesquite fire. LOL We used to get a one inch snow in West Texas and the state police would shut the hwys down.

Holy cow!! Another person moved from TX up to the Frozen North!?!?! I have to say you've got more guts than me, though, bar-b-quing in 12 degrees and the snow. I do stuff like that down to about freezing and then I totally wuss out. It's 19 degrees below zero here as I type this. I went out today when it got up to two (snort) so I could gather pine boughs for a wreath and "enjoy" the real winter weather and feel all Christmasy. Thought I was going to freeze to death dragging that little sled back home with the measly little sprigs I cut before I turned tail and run!!! LOL

Ever try black eyed peas? Get a lb of dried peas, soak them over night. Dump in your favorite cooking pot, cover w/ water. Bring to a slow boil then reduce to a simmer. Add either two smoked ham hocks, 1/2 lb clear side meat cut in strips, or if you have a real taste for it, 1/2 lb of salt pork. (if you were not raised on the side meat or salt pork, you best stick w/ the smoked hocks) Add a bit of pepper & salt & 1 tbl spoon of sugar. That's it. Cook until the peas are soft, usually 3-4 hours.

I think everyone in Texas has a chili recipe. I have one similar to this but I always brown the onions with 3 or 4 jalapenas to warm it up a bit.

Mmm-mmm! Thanks for the warmer-upper recipe! As a matter of fact, I have a big slew of hot cheeese & chicken enchiladas finishing right this minute. I guess great minds think alike! :-) (By the way, we moved up here from near the town of West, south of Ft. Worth. My friend read me the N. Texas forecast for today and we both just groaned. Freezing rain and then snow -- Whoa! THERE's a mess in Texas! Stay warm and don't go out with the crazy drivers!!) --Dawn

I JUST got in outta the cold sleet that"s comin" down here at the DFW airport area and had me a fine bowl of RED! WITH onions and extra-sharp cheddar shredded into it, tortillas and ORGANIC MILK!!!! YUMMM!
Yep, it"s BITTER COLD out there and the streets are slick with frozen sleet on it. The bridges are all iced over and folks are thankfully slowing down on their way home. I got a 6AM sim session to teach tomorrow. Don"t look forward to driving in this stuff and the Jeep will be covered in ice for sure, as it"s sittin" outside in the street and sleet. Poured quart of alcohol (from Home Depot paint section) in my windshield squirters before coming inside. A shot of good whiskey and a good sleep is next. G-nite everyone! Stay warm! (West, Texas!?? That"s where our ex-gov Ann Richards was from. Dawn, you ever buy gas at that Kolache shop on the hiway called "the Czech-Stop"? I stopped there late one nite and was pumping gas, and noticed on the gas-pump a sign that said "no out of town checks". I thought it was so funny I went in as asked if they"d sell gas to an out of town Pole. The blonde just gave me a "deer caught in the headlights look" and never got the joke. Oh well.) G-nite.

Hey gahorN, just guessing here, now that it is Thursday morning, but I bet you didn't go teach this morning.. All the schools and training centers are closed today in the DFW area.

Live TV coverage is awesome these days. Two local TV stations had live cameras on the freeways covering a jackknifed 18 wheel truck when on the other lane going the other way another truck hit ice and jack knifed and clipped a parked van. Skidded into the guard rail and caught fire!! Live!! Saw the driver climb out and run off. Was report of a passenger, but never got final word on him. I am sure that it will be all over national news tonite. DFW area does not handle ice well, which is what we get.

Now back to chili,, someone mentioned putting the beans in with the chilie,, nope, don't go it.. and about the black eyed peas!! YES,,, we had a bumper crop last year and loved them !!! Used the drier and had them for months after the garden quit. None this year,, too dry..


Did I mention recourd low here today? My weather station here in the house showed a low this morning of 14.1,, I know you northern people see that often, but not here. Supposed to get colder tonite... If the rain guage ever thaws out I may get a reading on the sleet that fell.

Ok,, back to the tractors..

Laughing so hard my side hurts!!! LOL LOL! YEAH I know the Czech stop, and that is a GREAT line!! Gosh I wish I'd been there to see her reaction! (They aren't just known for their wacky sense of humor in West. LOL) Ah man! Stay warm down there, y'all! Don't go out on that crazy ice any more than you have to.
