I was plowing this weekend with my 2N. I have a dearborn 2 bottom plow and had a great time turning over a couple of acres. The tractor has a Zane Thang on it so I disconnected it to plow. What I noticed though, was the lift lever was very touchy when trying to get it to the right depth. For example, the field was actually three fields I had previously planted in two. One had corn last year, one was untouched sod, and one had oats last year. When I would travel between the areas the harder soil of the untouched areas would slow the tractor and the plow did come up a little automaticly but the wheels would start to slip or the tractor would slow too much. When I went to lift the lever it took like an 1/8" of movement to make a big difference. Same thing when I got back to the softer soil. I would lower it again ever so slightly to get a little deeper in the soil. It just seemed to be soo touchy. Is that normal? Or do I need to adjust something, maybe the spring tension?

Yes it can be touchy and that is one reason the quadrant stop needs to be used. Set the quadrant lever to near to where the depth is right and then set the stop. If you need more or less draft move the stop in small increments up or down till it is what you need.

Is your plow running level side-to-side and front-to-back? is the front bottom taking the same width cut as the back one? Are the shares and/or landslides worn out? A plow that is out of adjustment or running worn parts can be hard to control especially in varying soil conditions.
