correct exhaust valve

I have an 8n that the #1 cylinder"s exhaust valve retainer came out and the valve was floating. Needless to say only 3 cylinders were compressing. I took the head off and removed the valve and realized that the valve had been bent and setting at an angle for some time; yet, it had been running well.
Anyway, I bought a new valve to replace it and found that the two were different. The old valve stem was machined up to an inch or so from the head while the new valve stem was machined up to the head. In this fashion, my old parts will not work with the new valve. Can someone explain to me please what is happening. I assume that there was a change in valve parts somewhere along the line. I am a fair mechanic, but have no experience with this situation and can not find an explanation in the repair manual.
