I'm renovating my 1952 8N, and it has been sitting on blocks for weeks with all three gear oil drain plugs removed. I have it back together now, so bought a 5 gallon pail of SAE 80-90 gear oil and put it all in.

That brings it about 1/2 inch above the full mark on the dipstick. I think this is OK because the lift is down and I can't start the engine yet to raise it (doing sheet metal work - hood and gas tank not yet attached).

When the lift is raised and the hydraulic cylinder fills, I think it will bring the gear oil level down to the full mark. Is that right?

5 gallons is what it takes to fill the resevoirs on the 8N tractor. If it shows a little over it will not be critical. If it were to be as much as 2 inches above the full mark it would be critical as it would cause the rear axle seals to be prone to leak.
The ram cylinder will not hold much more than a pint so I doubt you will see much of a difference in the level on the stick.
I think you are OK where you are with the level.
