How do you degrease sandblasted metal without leaving all sorts of fibers stuck to the metal? It is like running a rag over sandpaper.

You must be using a lot of pressure and very coarse sand. I simply use a wire brush on an angle grinder or drill, and follow with wax and grease remover until the rag comes back clean. Have done this with my own blaster and a 350 CFM commercial -- no problem whatever. Also it is best to remove the bulk of the grease first. This is true whether you are blasting or using a wire brush.
