Does the metal side of the intake-exhaust gasket for a Cockshutt 30 go toward the head or toward the manifold??

Any help for you experts will be greatly appreciated.

I have no engine specific answer for you, but TYPICALLY, the metal side faces the manifold, as that is the hotter of the 2 parts, and "moves" the most with expansion from heat. The metal side will last longer as the manifold "scuffs" past it than the fiber side.

Rule of thumb is the metal faces the side with the most thermal movement. Gaskets do "scuff" as Bob said. But then engineering wise never say never, never say always....hmmmm.

I would imagine it goes the same way as on the AC tractors- the metal side goes to the engine, the gasket toward the manifold.

On an AC engine, like a WD, etc., it can go only one way, otherwise the metal cup would be crushed.
