I have two 6hp+ engines that had copper head gaskets. My question; could I substitute gasket material that I can find and cut easy instead of copper?

Greetings,
We are a custom cutting service employing a 5 axis Waterjet with travels of 8’ x 12’ by 3’ of Z axis height. Additional details at our website www.amswaterjet.com. Please advise if we can be of service.

yes
I've restored many old Hit n miss engines. Many
times the head gaskets have to made. They work
fine for me. Make sure to cut the holes to allow
water to get into the head though.

I would probably stick with copper, but I might experiment if it was easy to pull the head and try again.
