I just got a 2 bottom plow that is a three point mount. Why are the bottom 2 points at different
heights about 2 inches different

If your cross shaft does not rotate in the frame, the offset is used to assure a full even cut by the first bottom plow. If your cross shaft is also adjustable by rotating it in the frame, this added adjustment is used to correct side draft in the plow. If your tractor needs a lot of steer wheels running sideways to keep it in the furrow, this rotation will aid in taking that draft away. Most 3 pt hitch cross shafts on plows are also moveable side to side to help place the load to a centerline behind the tractor. Wheel setting on the tractor, hitch settings on the tractor and hitch settings on the implement are all important to efficient use. A properly set up 3 pt hitch plow will not pull sideways.

When plowing the right wheel is running in the previously plowed furrow. This naturally causes the tractor to be at an angle. The plow's beam is adjustable to compensate for the tractor's position in order to cut 2 equal depth furrows. On level ground you notice one plow point(the right) is higher; if you could see them while cutting they are level. That's the best I can answer the question.
