Beins turkey day was turkey, we did the ham thing for the santa day. Had this ham bone left over in the fridge.

Sure nuf, she whipped out this bag of pinto's, a pot of rice, a sweet onion, and bro and gals, I am in heaven....eatin on it while I chat. But it was all I could do to restrain myself while it was a cookin. Well it's done now and down the hatch it is.....grin.....just one problem; can't find my Jalapano peppers. Oh well, life is a beach then you die.

I've had pintos and cornbread but not the rice with them.Is it cooked with the pintos or served seperate?

We always have rice with the beans (Coonass cook and they gotta have their rice.....goes with their webbed feet....you know rice is grown underwater), cooked separately and served under the beans; lots of juice to lube things up. If not too lazy, the cornbread, cooked in an iron skillet and lots of real butter comes along for the ride. Garnishes include onions and Jalapeno peppers and peppers in the bread are great, but she can't eat them so I have to have them separately.

If you don't have the ham, a generous portion of sliced, spicy, high quality, sausage adds the desired (meat) seasoning. I don't know what spices she adds (other than a generous portion of Tony Chachere's Original Creole Seasoning), but when it's cooking all you can do is ask "when do we eat"? Soak the beans for an hour in tap water before you cook them

Man, it's 9:30 am and I'm ready to go at it again just talking about it. Beans for breakfast anyone? Grin

We cook the rice and beans seperatly but serve together. We also cook Cajun saugage with the beans. Southwest Louisiana-Cajun country

Where do you think she learned to cook? But etoufee is too rich for me and I never could bring myself to suck the heads. yucko. Course I'm not the Coonass in the family, but I'll drink the beer and watch. Grin

Well Aaron, do you get any before you go or have to wait till you get back? I agree the cornbread is great with them. For some reason, we just don't bake it anymore like we did when the kiddo's were here.
