I'd first check the temp gage to make sure THAT'S not the problem. (Those mechanical gages are not noted for their accuracy or long life....) Test by removing and sticking the bulb in a pan of boiling water. The gage hand should stop up near the right end of the "RUN" band with the bulb immersed in boiling water. If the gage checks out, then suspect either a defective thermostat, or possibly the 'stat is not seated properly in it's housing. Test the 'stat similar to above: Remove it and stick it and a thermometer in pan of water on the stove. You should see the valve open at about 160 degrees or so. Running the motor too cold shortens it's life (rapid buildup of condensation, acid, etc in the oil). It'll also run better, use less gas and develop a bit more power when run at the proper temperature.
