You should be able to leave all your gages as is. The ammeter doesn't care whether it's on 6 or 12 volts. If the temp and oil gage are mechanical, they don't care either (they're non-elecric!). And if the temp and oil gage are electric, there's already voltage regulator in the current supply to the gages - attached to the back of the instrument panel. The gages actually run on 5 volts and the voltage regulator takes care of dropping the supply voltage, regardless of whether supply is 6 or 12 volts.

(I converted a '56 S-180 to 12 volts many years ago. The 6 volt gages were left "as is" and are still working fine today.)
