Beautiful job on the blade setup. I've been trying to figure something like that out and now I have an idea where to start. Thanks for the pictures. As far as your questions on the hydraulics, you should be able to hold at any height. Are you using the controls properly? By that I mean are you letting the control rod rest at the peg about mid-travel? This is the hold position. If it is not holding there could be something wrong in the pump. Just had my belly pump out to change the seal, took it apart to check everything and found a collapsed spring called a hold up spring. There are 2, changed them both just cause. If one of these are bad it may cause a problem like you are describing, did not spend a lot of time figuring out flow through the pump, so I won't say for sure. Springs are available through Carter & Gruenewald, about $5.00 each. Good luck. Doc.
