Dave,
I use "Gun Grease" on my new head gaskets. It allows them to move if necessary. Also makes it easier to take head off again if necessary.
I tighten the head bolts to 75% of torque in a circular pattern starting with the middle bolt in the head. Then 90% of torque in the same pattern and finally 100% in the same pattern. This allows any creep or other minute movements to happen in an orderly manner.
