I have heard of thermostats being marked wrong or also new ones not working correctly. Can you check it by itself in a pan of water on a stove to see what temp it opens? That will tell if the "new" one is really new and working as it is supposed to work. Also be sure your thermometer is reading correctly and the tractor temp gauge is reading correctly. When you say "worked it for an hour" is that at full load? If not, it may not warm up anymore than you report. At light loads, it may never get warm enough to make the thermostat open and the 125 F you see is because of "backup" from heat other than through the thermostat.
