I was wondering this same thing. When I did my engine over my pistons were below the block. I would be afraid that much out of the block would be hitting the head or the plugs. You must have .200-.300 thosandths over the block and it seems to me you want the compression to be down inside the sleeve area. Otherwise all that compression is on the headgasket. I hope someone else adds to this that is a little more knowledgeable than myself.
