The "button" part of the thermostat goes in towards the motor. The button usually has the opening tempature of the thermostat stamped on it.

The "cage" portion of the thremostat goes towards the radiator. The cage looks like 1/2 of the McDonalds arches, and has a small rod from the center of the thermostat that connects to the center of the arch.

I also modify all of my thermostats with a "bleed hole". I drill a 1/8" hole in the flange (close to the center of it) so that a small amount of water is allowed to circulate past the thermostat when it is in the closed position. This also allows trapped air to be bled out of the system. The hole allows for a more accurate operation of the thermostat. All of the more expensive thermostats will have some type of hole, or bleeder valve built in them for this exact purpose.
