H cooling

I have a '50 H that I just put a thermostat in--it didnt have one and was always cold. Now when I run it the temp goes up to about 220 and then very quickly falls to about 180. Its a 180 thermostat that I put in it. But why is it getting so hot before it opens? It continues to rise and fall this way as long as i run it. It is also wanting to push a lot of water out the overflow and around the cap, but only now and then. Its not leaking compression pushing it out --just the water swelling from heat. Its not getting hot to the "overheating" range according to the gauge. Bad cap maybe? Defective, new thermostat? It ran perfect before, it just never warmed up. Is this a pressurized system? I also put a delco one wire alternator on it today--man, it just barely does fit !! Thanks for any help.
