John - Your idea will work fine! To simplify wiring, suggest wiring the quick disconnect with the hot side to the "BAT" terminal at the regulator. Then wire the grounded side to a regulator mounting screw. My old Kenworth truck had a similar setup when I bought it. The previous owner wired a quick disconnect to the hot side of the starter solenoid and to ground. A battery charger with a suitable mating fitting could simply be plugged in - no need to partially raise the cab (the truck's a cab over) and then wrestle the battery box cover off to charge the batteries.
