As simple as I can make this, open center systems flow max oil at all times and the oil is just sent back through the system unused. Closed center systems have the ability and sense the amount of oil needed and only flow that amount of oil. It uses less power and causes less wear on the system. Everybody does it a little different and they all have different names for it but that is how it works basically.
