A good engine shop can check the head for thin spots. They can 'wand' it and tell you what you have to work with. If a previous owner had a (bad) habit of not using antifreeze, it could be pretty thin around the recess for the valves. When working on my H, the casting broke in at an exhaust seat where it was VERY thin. Just to see what was left around the cylinder I cut it with a chop saw across #3. It was so thin over the piston area that .010" of milling would have ruined it.
