Doing just one would provide enough opportunity to do both. By the time you take head off you might as well drop pan and pull pistons and sleeves as well. It would be a good time to just give it all a good looking over such as rings, bearings and so on. If I was to guess as to where it was leaking, I would have head gasket as the top item to check. Then freeze cracks in the head and block but if you know the antifreeze has always been good then I would check head surface and sleeve seals. That would be my order of guess as to likelyness of leak.
