If I was you I would do as Zonie says and get some studs from a salvage yard. Plenty of 300's and H's (if they are the same) being parted out. Torqueing the bolts versus the nuts would become an issue if you were to use bolts instead of nuts/studs. Bolts torque different than nuts/studs. Have you ever noticed how much tighter you can get a nut when you turn the wrench on the nut instead of just holding it and turning the wrench on the bolt when you are bolting something tight? You can almost always turn the nut a few more times after you can't turn the bolt anymore. Something about the laws of physics on that I guess, but I would find some studs. Alot of newer engines indeed use bolts for the head, but of coarse most newer heads are casted with lighter metals such as aluminum and alot of those require new bolts everytime the head is off for some reason or other if you are doing it by the book. Not sure what that reason is myself.
