Greg: I can't see that being a problem. The two furrow is pulled by same pull beam on one side. About the only thing the other plow would do, is give a bit of weight, might help on traction a bit. That shouldn't be a problem in the PA sunshine. I suspect 80% of the single furrow SA plow set ups you see around today were once two way. When farmers were plowing 5, 10 or 15 acres with these two way counted. Most of them are plowing the garden today and you will have the garden plowed quicker than mounting the second plow.
