Bryce - 200 degrees when pulling hard is fine. If you run 50-50 antifreeze in the cooling system and have a good pressure cap on the radiator you can safely run up to 220 degrees or so.

Sounds like your new alternator is not charging the battery. If is is not internally-regulated, you’ll need to wire an external regulator to the alternator in order for it to work.
