Sounds like you may need to retorque the head. The head gasket may not have crushed all the way to the sealing point. It is always a good idea to do that after it runs a while, and don't forget to recheck the vale setting after retorquing. I used a NOS IH gasket (steel/ asbestos)on my 10-20 and had to retorque 3 times! Copper gaskets also have to be retorqued. One other thing, did you check the head for cracks? It doesn't take much of a crack to suck water into the cyl on the intake stroke, and will also blow exhaust gas back into the coolant making it seem like it is over heating.
