Gas or Diesel? Where did you get that thermostat? 180-degree seems a little hotter than what I remember for the six-cylinder gas engines, anyway. If it's a gas, check the timing and fuel mixture. Too far advanced or too lean will make it run hot, but that would probably happen faster than what you say. If none of this checks out, it's probably time to have the radiator shop take a look at your radiator.
