K.B. - Any heavy truck dealer (Mack, Kenworth, Navistar, etc) part counter can supply you with an exhaust pyrometer gage and sensor. Stewart-Warner also catalogs them...punch below. The plugged opening in the manifold is probably where the original sensor went. What's too hot depends on the engine and where the sensor is located - either before or after the turbocharger. My old Kenworth (Cummins 855) with the sensor in front of the turbo says to keep the pyro under 1,200 deg.
