Some good thoughts here from the other guys. The only thing that I can add is to put a thermostat back in it. Sometimes the water pump actually pumps the water through the radiator too fast for it to cool properly. A thermostat helps slow it down and transfer more of the heat to the tubes/fins. A quick check to see if the fan is drawing enough air through the radiator is to cover the grill with a sheet of plastic temporarly. At any speed much above idle the fan should suck it up really tightly against the grill and hold it there. Are your hoses in good shape? Not collasped internally? Every M or H I've been around has a tendency to run almost too cool unless something was wrong.
