I have rebuilt many heads myself and also had them done by professionals when I just did not have the time. A professional shop charges about 50 bucks an hour so with parts and labor it would not take long to rack up 500 dollars. One very imnportant item to look at is the quality of head after rebuild. Do you want the head magnafluxed to make sure there are no cracks? Do you want the head to be decked to make sure is is flat? Do you want the intake/exhaust surface machined to make sure it is flat? To me there is a lot more to rebuilding a head that valves, seats and guides. Remember you gets what you pay for.
