I have done the same thing -- usually there is not much difference in steering the NF or SF, as long as the ground is firm. In very loose soil the SF sinks in and is harder to steer. In general, though, having done disking, etc with both the NF and SF there isn't much difference. As to price, I would be willing to pay a "little" more for a wide front, no difference for a SF or NF. Single fronts are very common in the south. My dad (vegetable farmer in Texas) had an H with all three fronts.
