It's been a couple of years since I did that to my H and I don't really remember how much room there is. But you might be able to get the end of a small pry bar between the end of the bolt and the housing.
What I do remember is that I shouldn't have trusted myself to remember how the u-joint goes back together. I thought when I took it apart that there was only one way to fit the pieces back to each other. Messed up those little rubber pads before I realized my mistake.
