I have a 560 with the same problem also, It's most likey a control valve problem. However it's unusual that the fast hitch and the couplers are causing the same problem. My 560 has the problem with the fast hitch. The engine will go under load because the directional control valve is leaking internally causing the pump to continusualy cycle oil. My advise to you is tap a test guage into a pressure port and see what your pressure is I thing the pressure should be around 1700 psi at 1500 rpm, there is a piggy back pump for the fast hitch so make sure you test the right pump. But low pressure does'nt always mean the pump is bad. the pump creats flow not pressure. So you could test gallons per min too. The trouble with mine is that the spool valve is wore allowing oil to flow past the lands. Thus not allowing the valve to nutural position. Causing oil to keep flowing. I hope this is some help.
