It's NOT mercury! Primarily because mercury is VERY expensive, and secondarily because it's toxic, and it doesn't work too well in this type of gage anyway (it's vapor pressure is too low...) Depending on the mfr and the temperature range a capillary type (mechanical) temp gage bulb will be partially filled with a high vapor pressure/low freezing point liquid - typically alcohol, ether, ammonia, butane, etc. I suspect new ones use a non-flammable refrigerant like R11, R12, R134A or similar as a working fluid, though of this I am not certain.
