The best way is to drain the radiator to a level that is below the top of the head where the temperature gauge sending unit is located. That being said, usually I skip that part and do the following. First I put some kind of penetrating oil on the fitting where the sending unit goes in the head and let is soak while I start by loosening the two nuts that hold the gauge mount to the bracket, cut the sending tube (if the gauge is junk like you noted) and pull the gauge out of the mounting bracket. Then set the new gauge in the bracket and tighten the nuts. Now try to loosen the sending unit from the head. If all goes well, I unscrew the old sending unit and quickly replace it with the new one. A little messy but then I don’t need to mess with draining the radiator. If the sending unit comes out of the head easy, this is not a difficult job.

What a surprise to open up your first old tractor's air filter case and find a can that appears to be filled with the scrap metal swept from around a machine shop metal lathe.
