To Polarize the Generator you could momentarily flash jump a wire from the VR's BAT terminal over to its ARM (or GEN) terminal and you ought to get a small spark. To insure the Field is well grounded, one can temporarily dead ground the Gens external Field post also. The same things accomplished by momentarily flash jumping any hot un grounded battery source feed, say with a wire from the starter post or the BAT terminal on the VR etc., direct to the Gens Armature post.

Polarizing the Generator passes current through its Field windings which imparts the correct residual North/South polarity magnetism into its iron poles, so when the Armature (coils of wire) is rotated inside that magnetc field, the induced voltage is the correct electrical polarity.

When you speak of "exciting" there must be an electromagnetic field present in which the armatures coils of wire rotates. The greater the field strength the more energy imparted/induced into the armature, so that means more field current must flow which is one of the control functions performed by the Voltage Regulator. The term exciting is heard more often when speaking of exciting the rotor inside an alternator. On those the voltage is induced into the stator and then must be rectified as it comes out AC.
