Head studs are very hard/strong, the bolts would need to match that strength, probably (grade 8). The second issue is aligning gaskets and the head itself. In my opinion it is easier to do with the studs. The third item is the fact that if the nut rusts on, the stud will turn out, if there is no nut the bolt twists off!
I cannot think of a strength advantage to bolts.
