You can usually find a hole to measure through. By the way, the burned fingers on the existing pressure plate should not make it unuseable unless they are warped out of shape. Just get it adjusted and use it. By the way, did he adjust the free play. Even if the fingers are not adjusted right, the problem you have would not have happened. If you have free play, the fingers and the throwout bearing do not touch. You might not have been able to release the clutch, but if all three fingers are burned it means they were all running on the throwout bearing. I don't like that carbon bearing but I guess they can last a long time.
