A fluid expansion based gauge is common in older equipment. They have a bulb like sensor with a waxy working fluid that expands when heated (like a thermostat with that small cartridge to move the valve). The pressure in the capillary tube (usually covered with a sheath of plastic) id connected to a Bourdon (a guy's name from wayback history) tube in the gauge that connects to gears. as the Bourdon tube is pressurized, it expands and uncurls. This force drives a set of gears moving the needle. Thermocouples are useful, but far more delicate in a vibrating situation. Due to the small amount of voltage they produce, an amplifier is needed to power a meter, adding complexity and cost. Remember when these were new, there were no comercially used transistors, it would have been a tube type amplifier. JimN
