Gray oil sounds like it has moisture in it.
The pan gasket should available at a Case/IH dealer or most aftermarket tractor parts places. NAPA could get it for you (I've bought complete gasket sets from NAPA) or you might be able to order one right here on this site. TSC might too, I don't know because I don't get many parts from them.
Don't crank too hard on those pan bolts when you put them back in, especially the ones in the front and rear of the pan. You don't want to pull the threads out of the holes.
