Thin gaskets without much give (like paper or composite) are used where you have smooth, solid mating surfaces. Thick gaskets with a lot of give (like cork or soft rubber) are used where one or both sides of the mating surface can flex, such as a valve cover or engine side cover. Thin hard gaskets, or a material with a known amount of compressibility are used where a dimension has to be maintained across the gasket joint. A head gasket would be a good example here.
Your bolster would use a thin paper or composite gasket as it has machined mating surfaces.
RTV gasket maker is good stuff, but don't get carried away with it. More is not better, especially when it oozes out on the inside and a chunk breaks free.
